  1. So I attempted to emulate these beautiful cupcakes today, but had no luck creating my ruffles :( What tip did you use? I tried using my 104, but like I said, it didn't work!

  2. I did use a 104 tip. I sat each cupcake in the center of a turntable and wiggled the tip up and down as the cupcake turned. Keep practicing - you'll get it!

  3. I think my frosting was too thick ... it spread nicely, but was too thick to create a nice delicate ruffle. I also was attempting to just turn it in my hand instead of getting my turntable out -- laziness never pays off! Your cakes are all amazing and beautiful. Thanks for sharing them on your blog :)

  5. The discs are sugar paste - I just rolled it out and cut circles with a biscuit cutter.

  7. You'll definitely want to use a turntable and a nice smooth rhythm as you pipe the icing. Once you get the hang of it, it's pretty fun to do!

  8. How do you make the sugar discs that are on top of these cupcakes?

  9. I just roll out some gum paste to an even thickness and cut circles with a round cutter. I let them dry overnight before I pipe on the monogram.
